sauteed whole branzino

Cooked my first fish. I still need to get used to fish. There's a weird nausea I get if I eat too much. The best fish house in the city is a block away so I'm determined to make use of it. I also like how cooked fish looks and I love lemon and olive oil.
I think as long as I'm cooking the fish I'm OK with it. I will never eat mussels though. That would trigger my gag reflex for sure.

I have a few years to get used to this before I'm living on a boat and this is dinner every other night.

sauce gribiche

2 large hard boiled egg yolks
1 teaspoon Dijon mustard
1/3 cup extra-virgin olive oil
3 teaspoons Champagne Vinegar (or mix white wine vinegar and Champagne and yes, I bought a $10 bottle of Champagne to make this)
1/2 squeezed lemon
8 to 10 small capers; drained, rinsed, and squeezed dry
about 1/4 cup fresh Italian Parsley

No pickles or egg whites

these are drinking shorts

You really need to be a professional to pull this off. You would normally only see these at the grocery store when the owner is buying; a bag of ice, cokes, whiskey and two packs of smokes. They are that special. Rare. Like seeing a beautiful bird. You should treasure that moment. Press it close to your chest.
